Pesto Pasta Salat | Pesto Pasta Salad

Normalerweise mache ich auf Feiern gerne meinen mediterranen Nudelsalat (mit einem "Honig"-Senf-Balsamico-Dressing), aber ich wollte mal was anderes machen. Und da ich Pesto liebe, habe ich gedacht, dass es mal an der Zeit wird einen Pestopastasalat zu machen.

Party Resteessen als Lunchbox - mit Pulled Jackfruit



Zutaten für 4-5 Portionen:
  • 500g Orecchiette Nudeln (andere gehen natürlich auch, aber ich finde die perfekt für diesen Zweck)
  • 100g getrocknete Tomaten 
  • 300g Tomaten (ich nehme hierfür gerne ganz kleine Tomaten. Die sind oft aromatischer als die großen)
  • Optional, wenn euch das nicht genug Gemüse ist: Zucchini/Aubergine (fein gewürfelt, kurz angebraten)



Für das Pestodressing:
  • 1 Bund Petersilie
  • 1 Bund Basilikum
  • 1 Bund Rukola (Ihr könnt auch nur Basilikum oder nur Rukola etc. machen oder anderweitig mischen)
  • 30g Cashews
  • 30 g Hefeflocken
  • 50ml Olivenöl
  • Salz nach Geschmack
  • bei Bedarf: einen Schluck Wasser



Zubereitung:
  • Nudeln in reichlich gesalzenem Wasser al dente kochen. Ruhig etwas kürzer als angegeben kochen: Die Nudeln sollen ja abkühlen und der Kochvorgang endet ja nicht direkt, wenn die Nudeln abgegossen sind.
  • Wenn ihr mehr Gemüse drin haben wollt: 1 Zucchini und/oder eine Aubergine in kleine Würfel schneiden in etwas Olivenöl mit einer Prise Salz kurz anbraten.
  • Getrocknete Tomaten fein schneiden.
  • Frische Tomaten schneiden, sodass sie grob die Größe der Nudeln haben.
  • Für das Pesto die Kräuter mit dem Olivenöl zusammen pürieren. Ich habe das im Standmixer gemacht (weil ich für eine Party eine große Menge gemacht habe) und musste einen Schluck Wasser dazu geben, damit das ordentlich cremig wird.
  • Cashews und Hefeflocken dazu geben und weiter mixern.
  • Mit Salz abschmecken.
  • Alles vermischen. 
  • Fertig!

I usually make my mediterranean pasta salad (with a "honey" mustard balsamico dressing) for parties, but I wanted to make something different this time. And since I love pesto, I figured a pesto pasta salad would be the way to go.

Ingredients for 4-5 servings:
  • 500g Orecchiette pasta (you can use a different type of pasta)
  • 100g sun dried tomatoes (in oil)
  • 300g tomatoes (I like to use small (cherry) tomatoes, they are usually more flavorful than the bigger tomatoes)
  • optional, if you want more veggies: zucchini/eggplant (cut into small cubes, briefly fried)


Pesto Dressing:
  • 1 bunch of parsley
  • 1 bunch of basil
  • 1 bunch of arugula (you can just do basil or arugula or any other combination you like)
  • 30g of cashews
  • 30g of yeast flakes
  • 50ml of olive oil
  • salt
  • if necesary: some water



Instructions:
  • Cook pasta in salt water until al dente. So don't cook them as long as the instructions say. The cooking process continues after the pasta is out of the water and we want the pasta to cool down without going mushy. 
  • If you want more veggies, take one zucchini and/or an eggplant. Cut into small cubes and briefly fry in a bit of olive oil and a dash of salt.
  • Cut up dried tomatoes.
  • Cut up fresh tomatoes to about the size of the pasta.
  • For the pesto: Blend herbs with olive oil. I did this in my blender (because I needed lots more for a party) and had to add a shot of water so everything blended nicely. 
  • Add cashews and yeast flakes, blend more.
  • Season with salt.
  • Mix everything!
  • Done!
