Another Lunch: Mushrooms, Broccoli, and Almonds

I don’t really have a name for this dish. It’s just one of those “I had mushrooms and wanted to have lunch” type of recipes where you look for things in your kitchen that might work well together. So I made fried onions and cremini mushrooms in an almond butter sauce on garlic mashed potatoes with pan fried almond broccoli.





Ingredients for two servings:

  • 500g of cremini mushrooms
  • 300 of broccoli
  • 2 onions
  • 3 teaspoons of almond butter
  • 50ml of oat milk
  • 3 large potatoes
  • 1 clove of garlic
  • a dash of soy sauce
  • salt
  • some fresh nutmeg
  • a table spoon of vegan butter
  • 2 tablespoons of almond flakes
  • a bit of oil

Instructions:

  • Cook the potatoes in their peel in lightly salted water. 
  • Finely chop the garlic. 
  • Clean the mushrooms and cut them in ¼in / 0.5cm slices. 
  • Cut the onions in half, then also in ¼in / 0.5cm slices. 
  • Heat up a big pan and fry the mushroom slices for a bit, lightly season with salt. 
  • Either fry the onions at the same time in another pan (or both in one pan if your pan is big enough... But don't overcrowd it) or take out the mushrooms and then fry the onions. 
  • I ran a one-pan kitchen today. You are welcome to use more or to prep stuff in advance, but that's what I did. 
  • Once both onions and mushrooms have a nice roast (but can roast a bit longer), mix onions and mushrooms in the pan. Push them aside a bit, so there's room for the broccoli. 
  • Cut the broccoli into slices (about the same thickness as the other veggies), so they cook quickly in the pan. 
  • Turn down the pan (I used it at about 20% of the power), add broccoli to the part of the pan that you freed from the other veggies. 
  • Add a bit of oil to the broccoli side. Also splash a bit of soy sauce on top. 
  • As the broccoli fries on its side of the pan, it will also take up some of the aromas the mushrooms/onions left in the pan. 
  • While the broccoli is cooking, peel the potatoes. 
  • Mash the potatoes, add some salt, minced garlic, nutmeg, vegan butter, and then mash some more. 
  • Once the broccoli is done, take it out of the pan. 
  • Now add almond butter and oat milk. Stirr well so the mushrooms and onions get coated in the almond butter and oat milk. This will not be a soggy sauce, but rather a coating. 
  • Plate the mashed potatoes and veggies, sprinkle with flaked onions. 
  • Done! Enjoy! 








Deutsche Übersetzung:

Ich hab jetzt ehrlich gesagt keinen Namen für das Gericht. Das ist einfach so ein "Ich hatte Champignons und wollte Mittagessen!" Rezept, das man entwickelt, wenn man in der Küche sucht, was grade so zusammen passt. Also habe ich gebratene Zwiebeln und Champignons mit Mandelmussauce auf Knoblauch-Kartoffelstampf mit Mandelbroccoli aus der Pfanne gemacht.




Zutaten für zwei Portionen:

  • 500g Champignons
  • 300 Broccoli
  • 2 Zwiebeln
  • 3 EL Mandelmus
  • 50ml Hafermilch
  • 3 große Kartoffeln
  • 1 Zehe Knoblauch
  • ein Spritzer Sojasauce
  • Salz
  • etwas frischer Muskat
  • ein EL vegane Butter
  • 2 EL Mandelblättchen
  • etwas Öl

Zubereitung:

  • Kartoffeln in der Schale in leicht gesalzenem Wasser kochen.
  • Knoblauch fein hacken.
  • Pilze säubern und in 0,5cm dicke Scheiben schneiden.
  • Zwiebeln halbieren und in 0,5cm dicke Scheiben schneiden.
  • Eine große Pfanne erhitzen und die Pilze darin anbraten, leicht salzen.
  • Entweder brät man die Zwiebeln jetzt parallel in einer andere Pfanne (oder in der gleichen Pfanne, wenn die denn groß genug ist... Aber bitte nicht überfüllen!) oder man nimmt die Pilze aus der Pfanne und packt die Zwiebeln rein. 
  • Ich habe alle mit einer Pfanne gemacht (muss man ja alles spülen ;))... aber man kann Sachen auch vorbereiten etc. Ich hab's so gemacht wie's hier steht. 
  • Sobald Zwiebeln und Pilze schön angebraten sind (aber noch n bisschen können), beides in der Pfanne mischen. Dann etwas zur Seite schieben, damit in der Pfanne Platz für den Broccoli gemacht wird. 
  • Broccoli in scheiben schneiden (von der Dicke wie die anderen Sachen), damit er in der Pfanne nicht lange braucht. 
  • Hitze runterdrehen (ich war bei 2 von 10) und Broccoli in die Pfanne geben. 
  • Etwas Öl auf den Broccoli geben und dann mit ein wenig Sojasauce beträufeln.
  • Während der Broccoli auf der einen Seite gart, nimmt er auch ein bisschen vom Geschmack auf, den die Pilze und Zwiebeln auf dem Pfannenboden hinterlassen haben.
  • Während der Broccoli so vor sich hin gart, kann man die Kartoffeln schälen.
  • Kartoffeln stampfen, etwas Salz, den frischen Knoblauch, Muskat, und vegane Butter dazu geben und etwas weiter stampfen.
  • Sobald der Broccoli fertig ist, aus der Pfanne nehmen.
  • Mandelmus und Hafermilch zu den Pilzen und Zwiebeln geben. Gut verrühren, damit alles schön mit der Sauce bedeckt wird. Das wird keine suppige Sauce, sondern eher eine Glasur. 
  • Kartoffelstampf auf den Teller geben und dann das Gemüse (Broccoli und Pilze/Zwiebeln). Mit Mandelblättchen bestreuen.
  • Fertig! Guten Hunger!
