Brownie Cheesecake

When I first saw this cake at the Grindcore House in Philadelphia, I knew I had to have it. :) Brownie Cheesecake. Is there a better way to combine things? After returning to my native Germany, I went to great lengths to develop the perfect recipe. I took me three tries to figure out a good brownie recipe, and my poor friends and colleagues all had to suffer the "not quite perfect" versions.

This is not a recipe that can be done if you don't have a bit of time on your hands. Doughs need to rest, brownies need to cool down fully. I would suggest you prepare the different parts the day before you want to have the cake and assemble the next day.

Some minor changes will have to be made the next time,
but I am already very happy with the first try.

Ingredients: 

Brownies:

  • 200g dark chocolate
  • 250g of vegan butter/margarine (I used Alsan)
  • 80g of sifted unsweetened cocoa powder
  • 100g of flour
  • 1 teaspoon of baking powder
  • 350g of confectioner's (powedered) sugar
  • 60g of chickpea flour (if you don't have chickpea flour, soy flour will work just as well)
  • 110ml of oat milk (or almond milk or soy milk...)

Ganache:

  • 60ml of oat milk
  • 60g of maple sirup
  • 120g chocolate

Cheesecake base:

  • 200g flour
  • 120g sugar
  • a dash of salt
  • 100g vegan butter (Alsan, Earth Balance... if you are using a salted type like Earth Balance, omit the dash of salt!)
  • 50ml of oatmilk
  • 40g unsweetened cocoa powder
  • 1 teaspoon of baking soda

Cheesecake filling:

  • 1200g silken tofu
  • 200g of plain tofu
  • juice of 2 lemons (ca. 100ml)
  • peel of 2 lemons
  • 70g of maple syrup (You can also use agave syrup etc)
  • 90g of unrefined cane sugar
  • 110g of starch
  • 80g of coconut oil
  • 200g of margarine (I used Alsan, Earth Balance should work just fine, too)

Instructions:

  • Prepare your brownies according to my recipe. Please note that the brownies are made in a 26cm (10¼in) spring form while the cheesecake will be made in a 28cm (11in) springform
  • Allow to cool down while you get started on preparing everything else.
  • Using all of the ingredients for the cheesecake base, turn them into a smooth dough. Cover and allow to rest in the fridge for at least one hour.
  • Put the silken tofu into a sieve (on a paper towel) and allow excess moisture to drip off. (Drain for at least 10 minutes).
  • Crumble up the regular tofu and put both regular and silken tofu in your blender or in a bowl to blend it with an immersion blender. Blend until it's nice and smooth.
  • Melt coconut oil and margarine in a bain marie.

  • Pour the molten fat into the tofu mixture and blend some more.
  • Peel and juice the lemons.
  • Add the lemon juice and peel, maple syrup, sugar, and corn starch.
  • Blend some more.
  • Let the mixture sit on the side. You will need it later.
  • Preheat the oven to 180°C/350°F.
  • Get the chocolate dough out of the fridge and spread it in a 28 cm spring form which you previously covered in parchment paper. 
  • Poke little holes in the bottom.
  • Bake at 180°C/350°F for about 15 minutes.
  • Pour the tofu mixture on top of the cake base.
  • Bake at 175°C/345°F for 65 minutes.
  • Take the cake out and allow it to cool down completely.

  • This is where you take a break, allow everything to cool down, do the dishes, write a letter, contemplate how many slices of this you will be able to eat, or if that cake makes a proper Saturday night dinner. If these contemplations take place over night, do not forget to put the cake in the fridge and to cover up those brownies.

  • Once you are ready to "decorate", here is what you do:
  • Add the milk for the ganache to a small pot, add the syrup, then add pieces of chocolate so they can dissolve once you switch on the stove (minimal heat will suffice!). 
  • While that chocolate is melting, you can cut the brownies into small cubes. I want to go for 1-1.5 cm/ ca. half inch pieces.
  • Once the ganache is ready (stir well, so it's nice and smooth), remove the springform ring from the cheesecake. 
  • Allow the ganache to cool down a little bit, so it isn't super liquid anymore. This way, you can spread it over your cake and let it come down on the sides without having it run off your plate/whatever it is that your cake is sitting on...
  • Pour the ganache over the cheesecake. It's okay (and actually desirable) if it drips down on the sides. 
  • Now take those brownie cubes and assemble them any way you like!
  • Allow the ganache to cool down/harden. Then you're good to go!
  • Enjoy!

Als ich diesen Kuchen das erste Mal in Grindcore House in Philadelphia gesehen habe, wusste ich, dass ich ihn haben musste. :) Brownie Cheesecake. Kann man einzelne Sachen besser kombinieren? Nachdem ich dann nach hause nach Deutschland geflogen bin, habe ich viel unternommen um ein Rezept zu entwickeln. Ich musste drei Versuche starten um ein gutes Brownierezept zu erstellen und meine armen Freunde und Kollegen mussten mir helfen die "nicht so guten" Versionen zu vernichten.

Das hier ist kein Rezept, dass sich mal eben so machen lässt. Teige müssen ruhen, Brownies müssen komplett abkühlen... Ich würde empfehlen, dass man die einzelnen Komponenten einen Tag bevor man den Kuchen herstellt und dann nur noch "zusammen bauen" muss.


Zutaten: 

Brownies:

  • 200g dunkle Schokolade
  • 250g Margarine (Ich benutze Alsan)
  • 80g gesiebtes ungesüßtes Kakaopulver
  • 100g Mehl
  • 1 TL Backpulver
  • 350g Puderzucker
  • 60g Kichererbsenmehl (wenn man grade kein Kichererbsenmehl da hat, geht auch Sojamehl)
  • 110ml Hafermilch (oder Soja-, Mandel-, Dinkel-... milch)

Ganache:

  • 60ml Hafermilch
  • 60g Ahornsirup
  • 120g dunkle Schokolade


Käsekuchenboden:

  • 200g Mehl
  • 120g Zucker
  • eine Prise Salz
  • 100g margarine (ich nehme Alsan)
  • 50ml Hafermilch
  • 40g gesiebtes ungesüßtes Kakaopulver
  • 1 TL Backpulver


Käsekuchenfüllung:

  • 1200g Seidentofu
  • 200g normales Tofu
  • Saft von 2 Zitronen (ca. 100ml)
  • Abgeriebene Schale von 2 Zitronen
  • 70g Ahornsirup (Agavendicksaft etc geht auch)
  • 90g Rohrohrzucker
  • 110g Speisestärke
  • 80g Kokosöl
  • 200g Margarine (Alsan)


Zubereitung:

  • Brownies nach meinem  Rezept backen. Komplett abkühlen lassen! So lange kann man schon mal mit den anderen Sachen anfangen.
  • Alle Zutaten, die ihr für den Käsekuchenboden braucht (siehe Zutatenliste oben) zu einem glatten Teig verkneten. Abdecken (Tupperdose, Klarsichtfolie...) und für mindestens eine Stunde im Kühlschrank ruhen lassen.
  • Seidentofu in einem Sieb mit Küchentuch drin abtropfen lassen (mindestens 10 Minuten).
  • Das normale Tofu zerkrümeln und mit dem Seidentofu zusammen in den Mixer geben - oder in einer Schüssel mit dem Pürierstab pürieren - bis es eine gleichmäßige, glatte Masse ist.
  • Kokosöl und Margarine in einem Wasserbad schmelzen.

  • Das geschmolzene Fett zum Tofu geben und weiter mixen.
  • Schale der Zitronen abreiben, dann den Saft auspressen.
  • Zitronensaft, -schale, Ahornsirup, Zucker und Maisstärke zum Tofu geben und gut verrühren.
  • Tofucreme zur Seite stellen, die braucht man erst später.
  • Ofen auf 180°C/350°F vorheizen. 
  • Den Kuchenbodenteig aus dem Kühlschrank holen und in einer 28cm Springform, die mit Backpapier ausgelegt ist, gleichmäßig verteilen. (Ich ziehe keinen Rand hoch.) Kleine Löcher mit einer Gabel hineinpieksen.
  • Bei 180°C/350°F 15 Minuten backen.
  • Kuchenboden aus dem Herd nehmen und Tofucreme drauf verteilen.
  • Bei 175°C/345°F 65 Minuten backen.
  • Kuchen aus dem Ofen nehmen und komplett abkühlen lassen.
  • Jetzt kann man eine Pause machen, alles abkühlen lassen, schon mal spülen, einen Brief schreiben, überlegen wieviele Stücke dieses Kuchens man alleine auf einmal essen kann, oder sich überlegen, ob der Kuchen ein angemessenes Abendessen für den nächsten Samstag abgeben würde. Falls man die ganze Nacht mit diesen Überlegungen verbringt, bietet es sich an, dass man den Kuchen abgedeckt in den Kühlschrank stellt und die Brownies abdeckt.

  • Sobald man bereit ist zu "dekorieren", sollte man so vorgehen:
  • Milch in einen kleinen Topf geben, Sirup und Schokolade dazu geben, damit die Schoki sich auflösen kann, sobald man den Herd (auf kleinster Einstellung) anstellt.
  • Während die Schokolade schmilzt, Brownies in kleine Würfel schneiden. Ich schneide meistens so 1,5cm große Würfel.
  • Sobald die Ganache bereit ist (gut umrühren, damit sie schön wird) den Ring der Springform entfernen. 
  • Die Ganache ein wenig abkühlen lassen, damit sie nicht superflüssig ist. So kann man sie auf dem Kuchen verteilen, ohne dass alles vom Kuchenteller läuft. ... Ganache also über den Käsekuchen gießen. Es darf auch was an den Seiten runterlaufen.
  • Browniewürfel auf dem Kuchen verteilen.
  • Ganache abkühlen/erhärten lassen. Dann ist alles fertig!
