Rosemary Panna Cotta with Strawberry Sauce

The dessert for our latest dinner party was easy to prepare and was also easily prepared in advance.

Ingredients for six portions:

  • 200ml soy cream
  • 300ml almond milk (I made my own)
  • 1 teaspoon of agar agar
  • 50g of raw cane sugar for the panna cotta
  • 1 vanilla bean or vanilla flavor
  • 2 rosemary sprigs
  • 600g of fresh strawberries
  • 1 tablespoon of raw cane sugar for the sauce




Instructions:

  • This first part is optional. If you don't care for the rosemary flavor, you can just skip the next three steps.
  • Pour milk and cream into a small pot and add the rosemary.
  • Bring to a boil, then turn off the heat and allow the rosemary to soak in the liquid for at least an hour.
  • Remove the rosemary from the pot.
  • Wash the strawberries. Remove the green parts.
  • Pick out a handfull of extra pretty strawberries that will serve as decoration later on.
  • Take the rest of the strawberries and blend them.
  • Add the tablespoon of sugar to the strawberries and blend some more. 
  • The sauce is ready to go now.
  • Stir sugar and vanilla (scraped from the bean if you're using a bean, a few drops of vanilla flavor if not) into the milk/cream mixture.
  • Stir the agar agar into the liquid.
  • Bring everything to a boil, stirring continuously.
  • Once boiling, turn off the heat. 
  • Fill the liquid into six small containers. I used silicone muffin liners. 
  • Allow to cool down. 
  • Store in fridge until ready to serve.
  • To serve, pour some of the strawberry sauce in a deep dish and place the panna cotta in the middle. 
  • The panna cotta comes out of its container more easily if you cut around the edges (not very deep, just so it doesn't stick to the sides) before you turn out the panna cotta. 
  • Decorate with strawberries! 
  • Done!



Deutsche Übersetzung:


Das Dessert auf unserer letzten Dinnerparty war einfach zu machen und außerdem einfach vorzubereiten.

Zutaten für sechs Portionen:


  • 200ml Sojasahne
  • 300ml Mandelmilch (Selbstgemacht!)
  • 1 TL Agar Agar (oder eine Tüte Agartine)
  • 50g Rohrohrzucker für die Panna Cotta
  • 1 Vanilleschote oder Vanillearoma
  • 2 Rosmarinzweige
  • 600g frische Erdbeeren
  • 1 TL Rohrohrzucker für die Sauce


Instructions:

  • Der erste Teil ist optional. Wenn du kein Interesse am Rosmarinaroma hast, kannst du die nächsten drei Schritte einfach überspringen.
  • Milch und Sahne in einen kleinen Topf geben und Rosmarin hinzugeben.
  • Zum Kochen bringen, dann die Hitze herunterdrehen und das Rosmarin noch für mindestens eine Stunde in der Flüssigkeit ziehen lassen
  • Rosmarin aus dem Topf nehmen.
  • Erdbeeren waschen. Grünzeug entfernen. 
  • Eine Handvoll besonders hübscher Erbeeren raussuchen, die später für die Dekoration genutzt werden.
  • Die anderen Erdbeeren pürieren. 
  • Einen Esslöffel Zucker hinzugeben und weiter pürieren.
  • Die Sauce ist dann fertig.
  • Zucker und Vanille (aus der Schote gekratzt, oder wenn ihr keine Schote habt, stattdessen ein paar Tropfen Aroma/ein Tütchen Vanillinzucker hinzugeben) in die Flüssigkeit rühren.
  • Agar Agar in die Flüssigkeit rühren.
  • Aufkochen und immer weiter rühren.
  • Sobald die Flüssigkeit einmal gekocht hat, könnt ihr die Hitze ausstellen.
  • In sechs kleine Behälter füllen. Ich habe Silikonmuffinförmchen genommen.
  • Abkühlen lassen.
  • In den Kühlschrank stellen bis serviert werden soll.
  • Zum Servieren etwas Sauce in einen tieferen Teller gießen und die Panna Cotta in die Mitte stürzen.
  • Die Panna Cotta lässt sich einfacher stürzen, wenn man vorher einmal am Rand rundherum schneidet (nicht sehr tief, nur so, dass die Panna Cotta nicht am Rand klebt).
  • Mit Erdbeeren dekorieren. 
  • Fertig!
