Kitchen Basics: Vegan Mayonnaise

Having grown up in a country where it is not only fully acceptable, but almost expected to eat your fries with mayonnaise, I have developed a deep love for this artery clogging, creamy beauty. I have tried a number of store bought vegan mayos... and they just didn't do much for me - except for draining my wallet. 

When I put together the list of dishes that I wanted to serve at the boyfriend's and my birthday party, I quickly realized that I had to find an affordable way to make lots of mayo. German potato salad just isn't the same without mayo (yes, there are some versions with vinegar in them... but no! Mayo!), and a good aioli needs mayo [recipe for Vegan "Honey" Aioli here!], too. 

I ended up making one liter of mayo. Just enough for a good birthday party! :)

Here's my recipe. It's super easy, doesn't need any fancy ingredients and doesn't spoil as easily as conventional mayo because it does not contain raw egg yolks! 


Pureed arugula makes the mayo even better!

Vegan Mayonnaise

Ingredients:

  • 100ml soy milk 
  • 1/2 tea spoon of mustard
  • 2 table spoons of lemon juice
  • 1/2 table spoon of white vinegar
  • 300ml oil
  • salt


How to make it:

  • Put soy milk, mustard, vinegar, lemon juice, and a dash of salt into a tall bowl and mix with an immersion blender.
  • Keep blending and slowly add the oil. 
  • Season with salt!
  • Done!

You can use the mayo for your perfect potato salad, on your fries, as the base for awesome dips... 

I used it as the basis for a "honey" aioli for my party.

Da ich ja in einer Ecke der Welt aufgewachsen bin, in der es nicht nur total normal ist, sondern eigentlich auch erwartet wird, dass man zu seinen Pommes Mayo isst (das ist nicht überall so!), habe ich eine tiefe Liebe zu diesem cremigen, wunscherschönen Arterienverstopfer aufgebaut. Ich habe schon einige Mayos aus dem Laden probiert... und die einzige bleibende Erinnerung daran war dann die gähnende Leere in meinem Portemonnaie.
Ich habe eine Liste an Gerichten zusammen gestellt, die ich auf Mr. Squirrels und meiner Geburtstagfeier haben wollte - da habe ich schnell festgestellt, dass wir eine Möglichkeit brauchten viiiel Mayo zu machen. Deutscher Kartoffelsalat geht halt nich ohne Mayo (ja, es gibt die Varianten mit Essig und so... aber NEIN! MAYO!) und für ne gute Aioli braucht man auch Mayo. [ein Rezept für Vegane "Honig" Aioli gibt's hier!]

Also habe ich letztendlich einen Liter Mayo gemacht. Genau richtig für eine Geburtstagsfeier! :)

Das hier ist mein Rezept. Es ist super einfach und man braucht keine aufregenden Zutaten. Außerdem verdirbt vegane Mayo auch nicht so schnell, weil keine rohen Eigelbe drin sind!

 

 
Mit püriertem Rukola wird das Zeug noch besser!

Vegane Mayonnaise

Zutaten:

  • 100ml Sojamilch (ich empfehle die von dm ohne Calciumzusatz! Mit Calcium gerinnt uns die Mayo immer!)
  • 1/2 TL Senf
  • 2 TL Zitronensaft
  • 1/2 TL heller Essig
  • 300 ml Rapsöl (wir nehmen das billige vom Aldi)
  • Salz (ggf. Kala Namak)


Zubereitung:

  • Sojamilch, Senf, Essig, Zitronensaft und eine Prise Salz in einem hohen Gefäß mit einem Pürierstab vermischen.
  • Langsam das Öl hinzugeben und weiter mixen.
  • Die Mischung sollte relativ schnell eine Emulsion bilden und fest werden.
  • Mit Salz (ggf. Kala Namak!) abschmecken.
  • Fertig!

Perfekt für Kartoffelsalat, Pommes oder schön für Dips...
Ich nehme es auch für meine "Honig" Aioli.
