Comfort Food: Mac'n'Cheese

I grew up with Kässpätzle as my favorite food. Basically, that's homemade (at least where I grew up) egg-based Swabian noodles baked with lots of cheese and caramelized onions. Now, I have not managed to make anything that is quite as good as what my Mom used to make, however, the following recipe is great and super tasty. 

Oh and I recently got a really cool recipe (at a vegan dinner party that was thrown for me in Philadelphia!) for egg-less spätzle that tasted incredibly great! So I may come up with a Kässpätzle recipe some time in the future. 





Ingredients for four servings:

  • 500g of pasta (to be fair, this says Mac'n'Cheese, however, I used bow tie pasta... because bow ties are cool!)
  • 50g of margarine or oil, plus some extra oil/margarine to caramelize the onions
  • 100ml of beer (can be replaced with plant milk, but using 100ml of beer also gives you an excellent excuse to drink the rest of the beer while cooking)
  • 200ml of plant milk (I used almond)
  • 2 table spoons of corn starch
  • 5 table spoons of yeast flakes
  • 5 medium sized onions
  • salt

Instructions:

  • Cook pasta until al dente. Make sure you don't overcook them, because they will still go into the oven for a little while later on. 
  • Drain pasta and set aside for later.
  • Cut onions in half, then slice them thinly. 
  • Get a pan, add some oil, heat up, and start caramelizing the onions.
  • This is going to take a while. Do not turn up the heat too much, otherwise you'll burn the onions. Add a dash of salt to extract some water from the onions. 
  • Stirr onions every now and then until they go transluscent, and then brown nicely. 
  • In the meantime, melt the 50g of margarine (unless you're using oil, then just pour that oil) in a pot that will be able to hold all of the pasta you cooked before.
  • Pre-heat oven to 180°C/350°F.
  • Add starch to the liquid margarine/oil and stirr well. 
  • Add beer and plant milk to the pot and stirr some more. 
  • Add yeast flakes. 
  • Add as much salt as you see fit for your cheesy experience.
  • This is the point where you turn up the heat a bit, stirr continuously, and bring the mixture to a boil. Once it has boiled, turn off the heat. 
  • Add the pre-cooked pasta to your cheesy sauce and mix it up until the cheesy goodness covers the pasta.
  • Pour pasta into a casserole dish. 
  • Get your beautifully caramelized onions ready and spread them on top of the pasta in the casserole dish.
  • Bake the dish for about 15 minutes. 
  • Serve and share with people you like!


Bow tie pasta instead of macaroni...
... because bow ties are cool. And there is no fez pasta.

Als ich klein war (und später auch größer) waren Kässpätzle mein Lieblingessen. Selbstgemachte (bei uns jedenfalls) Volleinudeln mit jeder Menge Käse und gerösteten Zwiebeln. Ich muss zugeben, dass ich noch nichts gefunden habe, was genau so großartig schmeckt, wie die Spätzle, die meine Mutter gemacht hat, aber der folgende Rezept ist echt lecker.

Oh und ich habe letztens (auf einer Dinnerparty, die in Philadelphia für mich geschmissen wurde) ein echt gutes ei-freies Spätzle-Rezept bekommen - ich hab die Spätzle probiert und sie waren großartig! Vielleicht gibt es also in der Zukunft auch ein  Kässpätzle Rezept hier im Blog.







Zutaten für vier Portionen:

  • 500g Nudeln (Ok, hier steht Mac'n'Cheese, aber ich hab keine Macaroni genommen, sondern Farfalle. Auf Englisch steht hier eine tolle Doctor Who Anspielung, leider lässt die sich nicht übersetzen)
  • 50g Margarine oder Öl, plus etwas extra Margarine oder Öl um die Zwiebeln zu braten
  • 100ml Bier (kann man auch mit Pflanzenmilch ersetzt werden. Aber wenn die 100ml Bier im Essen sind, muss ja irgendwer sich opfern und beim Kochen den Rest vernichten)
  • 200ml Pflanzenmilch (Ich hab Mandelmilch genommen)
  • 2 EL Speisestärke
  • 5 EL Hefeflocken
  • 5 mittelgroße Zwiebeln
  • Salz

Zubereitung:

  • Nudeln nach Packungsanleitung kochen bis sie al dente sind. Bloß nicht verkochen, weil die später noch ein wenig in den Ofen müssen.
  • Nudeln abgießen und für später zur Seite stellen.
  • Zwiebeln halbieren und dann in dünne Scheiben schneiden.
  • In einer Pfanne etwas Öl erhitzen und dann die Zwiebeln zum Karamelisieren hineingeben.
  • Das wird eine Weile dauern. Bloß nicht die Hitze zu hochdrehen, sonst verbrennt ihr die Zwiebeln.
  • Ein wenig Salz auf die Zwiebeln geben und ihnen Wasser zu entziehen. 
  • Zwischendurch immer mal wieder rühren, bis die Zwiebeln erst glasig werden und dann schön bräunen.
  • In der Zwischenzeit nehmt ihr einen Topf, in den später auch alle Nudeln gut reinpassen. 50g Margarine drin schmelzen - außer ihr nehmt Öl, dann einfach das Öl reinschütten. 
  • Ofen auf 180°C/350°F vorheizen.
  • Speisestärke in das geschmolzene Fett geben und gut verrühren bis die Masse glatt ist.
  • Bier und Pflanzenmilch hinzugeben und gut verrühren.
  • Hefeflocken hinzugeben und verrühren.
  • Soviel Salz wie ihr für die Käsigkeit braucht hinzugeben.
  • Sobald alles schön verrührt ist, erhöht ihr die Hitze und rührt kontinuierlich bis die Flüssigkeit kocht. Sobald die Flüssigkeit kurz gekocht hat, nehmt ihr den Topf von der Platte.
  • Die vorgekochte Pasta in die Käsesauce geben und umrühren bis die Sauce überall gut verteilt ist. 
  • Die Nudeln mit der Sauce in eine Auflaufform geben.
  • Die wunderschön gebratenen Zwiebeln auf den Nudeln verteilen. 
  • Bei 180°C/350°F 15 Minuten lang backen. 
  • Aus dem Ofen holen und mit tollen Leuten teilen!
